Crunchy Chicken Cheese Bake

Here’s the Recipe

Serves 4

Prep time: 20 minutes

Cook time: 40 minutes

Total time: 1 hour

Ingredients:

4 boneless, skinless chicken breasts (feel free to use thighs as a substitute)

Salt

Pepper

Cheddar Cheese Condensed Soup (store bought or homemade – for homemade, find my recipe here)

Sliced mozzarella or provolone cheese

1/2 cup Italian seasoned breadcrumbs

2 Roma tomatoes (optional)

Directions:

  1. Preheat your oven to 375 degrees. Spray a casserole dish with nonstick spray.
  2. Trim chicken and season both sides with salt and pepper. Place in casserole dish.
  3. Top chicken with sliced tomatoes if desired. If not, go ahead and top with mozzarella or provolone cheese (if placing on tomatoes, put the sliced cheese on top of the tomatoes). My husband does not like tomatoes so I do half and half.
  4. Pour over the cheddar cheese condensed soup.
  5. Sprinkle breadcrumbs over each piece of chicken.
  6. Bake uncovered for 30-40 minutes or until the chicken is completely cooked through.
  7. I like to serve this with my Easy Steamed White Rice to give it a cheesy chicken and rice feel. Enjoy!

Inspiration:

This is one of my all time favorite recipes! My nonna inspired me as I grew up to cook food that feeds our soul and that keeps the family together. I thought long and hard about what recipe I wanted to put first on my blog and I decided to choose a recipe that has been in my family for years. This is a recipe that my mom has handed down to me and something that I make regularly for myself and my husband. I have made tweaks over the years and try to keep it interesting. It is always a go to meal for us especially during the work week because it pulls together so quickly! My entire family loves it, and it never falls short when I have guests over. Plus, it can be made ahead of time! In my book, that’s a win for weeknight meals.
