The BEST Chicken Parmesan

Here’s the recipe:

Serves 4

Prep time: 25 minutes

Cook time: 30 minutes

Total time: 55 minutes

Ingredients:

4 boneless skinless chicken breasts

1 jar of your favorite marinara sauce (or homemade)

4 slices mozzarella cheese

1/2 cup of parmesan cheese

1 box of pasta of choosing

2 eggs

1 1/2 cups of Italian seasoned breadcrumbs

1 cup flour

Salt to taste

Pepper to taste

Crushed red pepper to taste

2 cups veggie/canola oil for frying

Directions:

  1. Preheat oven to 350 degrees and grease a casserole dish.
  2. Heat up marinara sauce in one pot and heat up the oil in a frying pan.
  3. Trim chicken.
  4. Prepare dredge station. In the first bowl add in the flour, salt, pepper, and crushed red pepper to your liking. In the second bowl, add in the eggs, salt, pepper, and crushed red pepper to your liking. In the third bowl, add in the Italian breadcrumbs.
  5. Coat each piece of chicken in the flour, then egg mixture, then breadcrumbs and set aside.
  6. Once the marinara sauce is warmed, spoon a small amount on the bottom of the casserole dish to cover it.
  7. Once the oil is hot, fry the chicken. Cook for about 3-5 minutes on each side until golden brown. Don’t worry about finishing the cooking here – it will finish cooking in the oven.
  8. Once the chicken is golden brown on both sides, place in the casserole dish. Pour a spoonful of marinara sauce over each piece of chicken.
  9. Top the chicken with parmesan cheese first and then the sliced mozzarella.
  10. Cover with tin foil and bake for 25 minutes. After 25 minutes, remove the foil and finish baking for another 5-10 minutes or until the top is golden and the chicken is cooked through.
  11. While the chicken is baking in the oven, boil a pot of water and cook the pasta according to the directions on the box. Once done, toss in marinara sauce and serve alongside the chicken.

Inspiration:

Chicken parmesan has always been one of my favorite meals. Surprisingly enough, my nonna never cooked it. She was from a poorer part of Italy so the meals that she knew and grew up on were more cost effective and simple than chicken parmesan. I decided to master it once I was in my 20s so it would be a meal that I could impress any guy I was dating. Luckily enough, it did impress quite a few of them.

But, this recipe is close to my heart because it is probably what landed me my most loving husband. I am pretty sure that this recipe is one of the reasons he fell in love with me. It is his favorite dish that I make and he would eat it every day if I would let him. If he sees that I have planned for chicken parmesan one day of the upcoming week, he waits with excitement for that day to come. He’s told me before that he has skipped lunch just so he has enough room for this chicken parmesan. It’s THAT good.
